Tap Room General Manager

The tap room general manager delivers revenues and profits by developing, marketing, and providing appealing restaurant service. Manages all tap room staff. This position will manage our new Lockport location, which is intended to open in the middle of 2024.

Pay range: $60,000 - $80,000 / year

Duties:

  • Acts as leader and manager of a complex full-service food and beverage operation, with complete responsibility overseeing site revenue, profit, guest satisfaction, operations, employee morale, and working culture.

  • Establishes tap room business plans by surveying tap room demand; conferring with potential customers; identifying and evaluating competitors; preparing financial and sales projections, analyses, and estimates.

  • Meets tap room financial objectives by preparing strategic and annual forecasts and budgets; analyzing variances; initiating corrective actions; establishing and monitoring financial controls; developing and implementing strategies to increase tap room profits.

  • Attracts patrons by developing and implementing marketing, advertising, public and community relations programs; evaluating program results; identifying and tracking changing demands.

  • Controls purchases and inventory by negotiating prices and contracts; developing preferred supplier lists; reviewing and evaluating usage reports; analyzing variances; taking corrective actions.

  • Maintains operations by preparing policies and standard operating procedures; implementing production, productivity, quality, and patron-service standards; determining and implementing system improvements.

  • Maintains patron satisfaction by monitoring, evaluating, and auditing food, beverage, and service offerings; initiating improvements; building relationships with preferred patrons.

  • Accomplishes tap room human resource objectives by recruiting, selecting, orienting, training, assigning, scheduling, coaching, counseling, and disciplining staff; communicating job expectations; planning, monitoring, appraising, and reviewing job contributions; planning and reviewing compensation actions; enforcing policies and procedures.

  • Maintains safe, secure, and healthy facility environment by establishing, following, and enforcing sanitation standards and procedures; complying with health and legal regulations; maintaining security systems.

  • Maintains professional and technical knowledge by tracking emerging trends in the restaurant and tavern industry; attending educational workshops; reviewing professional publications; establishing personal networks; benchmarking state-of-the-art practices; participating in professional societies.

Qualifications:

  • Minimum 5 years as a manager in a full-service (table service with full bar) restaurant.

  • Must have experience managing both front-of-house and back-of-house restaurant operations.

  • Experience and/or education in serving craft beer is a plus.

  • Must possess strong leadership skills in a customer focused environment.

  • Experience in accounting and budgeting in a service-related industry.

  • Solid track record of success in previous assignments demonstrating upward career tracking.

  • Demonstrates a history of maintaining professional conduct, upholding high standards, and has a strong understanding of business ethics.

  • Strong communication skills are required.

  • Must be dependable, reliable, and motivated.

  • Able to work eight to ten hour shifts, with extensive standing/walking.

  • May lift materials and/or product up to 50 pounds.

Dishwasher

The dish and general utility position is responsible for maintaining cleanliness and sanitation standards for china, glassware, tableware, cooking utensils, etc.. using machine and manual cleaning methods. This position also ensures the dish washing area is maintained as a clean, safe and sanitary facility.

Pay range: $15 - $16.50 / hour

Duties:

  • Sort and rinse dirty dishes, glass, tableware and other cooking utensils and place them in racks to send through dish machine

  • Sort and stack clean dishes. Carry clean dishes to cook’s line and other proper storage areas. Rewash soiled dishes before delivering

  • Change dishwater in dish machine every hour

  • Wash pots, pans and trays by hand

  • Remove trash and garbage to dumpster

  • Set up or break down dish washing area

  • Clean and roll/unroll mats

  • Fill/empty soak tubs with cleaning/sanitizing solutions

  • Sweep/mop floors, clean counters; deep clean kitchen each evening

  • Assemble/disassemble dish machine

  • Sweep up trash around exterior of restaurant and garbage dumpster

  • Conduct general restaurant and restroom cleaning as directed

  • Wipe up any spills to ensure kitchen floors remain dry

  • Notify manager any time dish machine wash or rinse cycle falls below safety standard temperatures

  • Do not touch dirty dishes before touching clean dishes without washing hands first

  • Other duties as directed

Qualifications:

  • Knowledge of kitchen sanitation, health and safety standards

  • Collaborative attitude with an emphasis on excellent customer service

  • Strong time management skills and ability to multi-task

  • Ability to read and comprehend labels on chemicals and cleaners

  • Experience working in a commercial kitchen utilizing all kitchen cleaning and sanitation equipment

Line Cook

Big Ditch Brewing Company is currently looking for an experienced Line Cook for our tap room. The ideal candidate will have one to three years of line cook experience in a high-volume, culinary driven environment.

Pay range: $15.50 - $21.50 / hour

Qualifications:

  • Basic knife skills

  • Experience operating standard commercial kitchen equipment

  • Understanding of basic food safety

  • Excellent communication skills

  • Must work clean and maintain excellent personal hygiene

  • Work well under pressure and be organized and self motivated

  • Must be able to work a flexible schedule. Weekends required

  • Must be at least 18 years of age

  • Able to lift and carry up to 50 lbs

  • Able to stand, walk, lift and bend for long periods of time

  • Demonstration of competency as outlined during training
