Wage Grade: Hourly

Pay: $16/HR + Tips (Tips pooled evenly and distributed based on hours worked)

Position Description:

Assisting the Restaurant General Manager and Kitchen Manager in the overall success of Kitchen at our new Moon Room location in SE Portland. The Lead Line is second in command tasked with upholding and enforcing the Kitchen Manager’s specifications and guidelines. The Lead Line also assists with food purchasing, preparation, and maintaining and enforcing quality standards, sanitation and cleanliness.

Essential Duties and Responsibilities

(Operations)

  • Assist in the planning, preparation and design of food menus and specials (as needed)
  • Produce high quality plates, both in design and taste
  • Assist in planning and directing food preparation when necessary
  • Control food costs and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures 
  • Plan and assign work to employees based on anticipated business activity
  • Fill in as needed to keep the kitchen running smoothly
  • Run the wheel as business dictates
  • Direct and organize dishes to execute and sell
  • Communicate any dragging items/issues with expo
  • Ensure plated dishes are to spec, give prepared plates the “final touch”
  • Comply with sanitation regulations, legal and safety standards; check and maintain proper food holding and refrigeration temperature control points 
  • Ensure that the kitchen is kept in clean condition (at company standard level) at all times, put staff in place to clean as needed; Communicate any maintenance issues promptly to the Kitchen Manager and Restaurant General Manager

  • Proactively communicate new food information to all Ecliptic restaurant employees and training of new dishes for kitchen staff

Skills and Experience

  • Must be 21 years of age. 
  • High School Diploma or GED required
  • Minimum of 3 years of experience in varied kitchen positions
  • At least one year in a leadership role or demonstrated progressive responsibility
  • Acquire Food Handlers card within 30 days of the start date
  • Understanding of various cooking methods, ingredients, equipment and procedures
  • Ability to respond to common inquiries or complaints from customers, employees and management. Ability to communicate and present information effectively before all levels of personnel and patrons; Ability to give high priority to customer satisfaction. 
  • Strong communication skills: ability to talk to others to convey information effectively
  • Excellent organizational skills; detail oriented & able to manage priorities and routine functions effectively and efficiently; ability to be proactive and take initiative; Capable of delegating multiple tasks
  • Mathematical Skills: Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. 
  • Treats all employees with dignity and respect; creates an environment where the entire team does the same. 
  • Ability to operate and use a PC computer, proficient in Microsoft Office suite and Google. Ability to use POS system. Ability to use HRIS system to complete both employee and manager level actions.

  • Good interpersonal skills and ‘got your back’ team attitude

Job Requirements

  • Able to stand for prolonged periods of time
  • Able to stoop, crawl, twist, turn, lift, kneel, climb ladders and stairs
  • Able to regularly lift/carry 50 pounds
  • Able to work in indoor and outdoor environment with sometimes slippery floors
  • Floor surface may vary from hard tiled floor or concrete to carpet
  • Ability to tolerate a high-level work pace that is typical for a retail food industry
  • The noise level in the work environment can be loud
  • Able to work 10-12 hours on your feet
