8 one 8 Brewing seeks a skilled and knowledgeable lead brewer to manage and lead the day to day operations of the brewery on our 10 BBL brewhouse. They will report directly to our brewmaster/co-owner and be responsible for day-to-day operations of the brewery including active roles in recipe development, procurement and management of raw materials, brewing, packaging, cleaning, quality management, training of new employees, and overall, embracing and raising the bar on the 818’s favorite craft beer!

Our location has a rustic and booming taproom. Our Beer represents our community in its artistry and attitude and has been very well received as we are in multiple box stores and blanket the San Fernando valley and surrounding areas with our in house distribution.   • Management of brewery team day to day operations and work assignments to achieve scheduled beer releases and production goals
  • Working with management to update and plan schedule
  • Raw materials receipt, storage and retrieval for brewing
  • Completing and maintaining brew logs for each session and communicating deviations from stated targets for criteria such as mash pH, mash temp, liquor: grist ratio, OG, fermenter volume/temp
  • Following established procedures to clean the brewhouse, fermenting and brite tanks
  • Adhering to safe practices when handling cleaning chemicals and adding correct amounts as needed for cleaning tasks
  • Transferring beer from fermenter to brite tank in a sanitary manner while maintaining balanced pressure
  • Filling/Emptying/Cleaning of kegs
  • Moving pallets of packaged beer to appropriate storage locations
  • General cleaning of brewery surfaces
  • Perform quality assurance checks on incoming raw materials and packaging supplies
  • Ensure lab equipment is well maintained
  • Thorough understanding of all brewhouse operations, vessels, and Software
  • Willingness to represent the brewery at beer festivals, tap takeovers, and other brewery events
  • Be a team player and able to interact with all levels within the organization
  • Adhere to all applicable local, state and federal laws, rules, and regulations
  • Educate staff on beer/tasting and develop a culture of learning and advancement.
  • Other tasks may be assigned as needed

Physical requirements

  • Ability to stand for long periods of time
  • Ability to stoop, crawl, twist, turn, lift, kneel, climb ladders and stairs
  • Ability to regularly lift and carry 44 lb boxes
  • Ability to regularly lift and carry 55 pound grain bags above waist level
  • Ability to lift/move up to 165 pounds with appropriate equipment and/or assistance
  • Ability to safely handle and use chemicals related to brewery operations and to wear appropriate personal protective equipment (PPE)
  • Ability to work in an environment where noise, temperature, and humidity levels may vary

Prefered education for the ideal candidate

  • Formal brewing education preferred (UC Davis, Siebel, ABG, etc)
  • Formal sensory training
  • Mechanical inclination
  • 5+ years professional brewing experience
  • 2+ years in a brewery leadership role (Lead Brewer, Head Brewer, or Production Manager)
  • A strong attention to detail, intuition, positive vibes, and must be process oriented

  • Annual salary range of $60k - $70k (dependent on experience) plus a year end bonus
